Instructions

  1. Crack eggs into a measuring cup.
  2. Add the milk and seasonings. (Salt should be added immediately before cooking, pepper not until after cooking)
  3. Using a whisk or fork, beat the mixture until foamy. Melt 2 tsp. butter in a frying pan on medium heat
  4. Pour eggs into frying pan.
  5. Stir mixture to break up the egg as it cooks and allow more liquid to touch the hot pan.
  6. When the mixture begins to form curd, increase heat to high and fold over eggs untill no liquid pools.
  7. Don't over cook the eggs as they will continue to cook after being removed from the pan.

Serves one. Good as-is or with katsup.
