Roast Chicken On Salt
This is an old family recipe from Russia:
- Stuff a plucked and dressed chicken with a quartered lemon, four peeled cloves of garlic and a couple of sprigs of fresh rosemary.
- Bind the chicken ready for roasting.
- Fill a baking tray with 1kg salt and place the chicken on top.
- Roast for 90 minutes at 190 centigrade.
The flesh should be moist, the skin crisp.
